Burgers and Breakfast

Diamond BurgersOn Monday my mother was diagnosed with bronchitis and is feeling pretty yucky. Even after getting two shots and a prescription from the doctor she felt even worse yesterday. So for last nights dinner I made these Cheesy Party Burgers from KevinandAmanda.com since they’d been on our short list of must try meals. I’m not going to lie to you, I was skeptical of the ingredient list but they looked so tasty on Amanda’s [name twins!] blog post that I had to know if they tasted as good.

Well internet, let me tell you, they do taste as yummy as they looked–possibly better! I left out the sesame seeds because my mother has a stomach issue and seeds make it worse but I don’t know that it made a huge different in flavor. I brought one for lunch today and I’m watching the clock so I can scarf it down.

the first time I made this casserole was Christmas morning.

While the burgers were in the oven I put together our favorite breakfast casserole to have for the rest of the week. I always make this casserole with just 1 pound of turkey sausage but this time I also substituted the 8 eggs for all egg whites. I am going to admit to you I was nervous about how it would turn out but there wasn’t a need to be. It is just as delicious as the other times I’ve made it. It’s such a staple for us. Next time I want to add something like veggies. Maybe fresh baby spinach or peppers.

Belated Christmas

small houseMy office was closed Tuesday through Thursday of last week, so I used a day of vacation on Friday and only had to work Monday. Six whole days off! It’s been a while since I’ve taken that much time in a row. It was glorious. I caught up on the dvr, hung out with my mother, did some reading, and some writing.

The family went to the botanical garden to see the light display there. We try to go every year. Some years they add new things, but it’s fun to see some of our favorites year after year.

brunchInstead of a big dinner this year my brother and I convinced my mother we should do something small. We all slept in then I made this breakfast casserole for brunch and my mother made biscuits. For dinner we had a cajun fried turkey (to make sandwiches) and I threw together cheese dip. Cooked sausage, cream cheese, and rotel. Pretty much the best dip I’ve ever put in my mouth, to be honest.

On Christmas Eve I made a Kentucky pecan pie slash derby pie slash chocolate pecan pie. I’m not wild about pecan pie (gasp) because of the caro syrup based filling, but I love love love pecans. This was a nice change of pace. It was sooo yummy when warm.

We didn’t open presents until late in the day. I received clothes for work, a sewing machine(!!!), a few classic movies on dvd, a new hair dryer from my brother and other random things. BTW, how cute is this little plate my mother found for me?!

I had such an amazing 4th of July weekend. My office was closed and I spent a lot of time with my boy BFF, his daughter and extended family. We did a lot of running around, ate some food, saw some fireworks, did some shopping and a big of lazing around.

I played with camera settings to shoot the firework show. I was pretty impressed with how my photos turned out.

Dinner on Monday was four chicken breast, a jar of salsa, a package of taco seasoning and then at the last minute, some fire roasted corn and black beans in the slow cooker. NOM!! It made a boat load of food so that’s what I had for lunch yesterday, along with a tortilla and some shredded cheese. This was seriously one of the easiest and tastiest meals! I can’t believe it took me so long to give it a try after seeing it posted everywhere.

Last week we picked up two very large containers of strawberries. Well, I’m only one person and couldn’t eat them before the berries got too ripe. I decided I needed to do something with them and found this amazing Fresh Picked Strawberry Muffin recipe from The Domestic Geek. I baked up a batch last night and let me tell you, they were so yummy! I had a few mishaps, which was totally user error and not the recipe. For example, I may have poured my very cold milk into my very warm melted butter and it got a little lumpy. I also don’t think I mixed the batter enough before scooping it out into my pan. You’d think I’ve never baked a thing before. They turned out well though! It’s definitely a recipe I want to keep using in the future. I’m thinking I may need to buy some fresh blueberries next!

shakeology

Today I started my morning off with vanilla shakeology mixed with peanut butter and a banana. This is pretty much my go to breakfast lately. This stuff isn’t the most tasty, I won’t lie, but with some stuff added in I really enjoy it. The bonus I’ve found is it has done great things for my energy level all day long. It’s a bit pricey but well worth it!

Every Wednesday we have staff meeting at work. The office has been super cold the last couple of days because our boiler unit has been shut down for the summer. I ended up having to make mint tea to warm myself up. This is the part where I complain about how cold it is outside and how it should be SPRING AND WARM. We had snow flurries yesterday morning. SNOW. FLURRIES.

I usually work through lunch, meaning I sit at my desk and eat because more often than not someone will knock on my door it’s closed. I guess I sorta know what it feels like to be a mom and not be able to go to the restroom on your own. (I do have a coworker that has actually followed me into the restroom to talk business before.)

I’ve been making some variation of Gina’s black bean and corn salad for a few years now. We love it (and so many other Skinny Taste recipes) during the summer. It’s one of those dishes that gets even better after it’s been in the fridge over night. For lunch today I put it on a bed of salad and cut up some grilled chicken. It was incredibly tasty! Sadly this picture is terrible, but since I only took one because I was so hungry and wanted to EAT, this is all you get. Maybe I should start using my camera instead of my phone more often?

And finally, I had to share this because it’s so cute. A friend at work picked this up for me. Sticky notes and stickers as well as a pink glittery ink pen. Target, y’all! They always have the best Hello Kitty things.
